LEMON THYME RAINBOW TROUT
- 1 lb rainbow trout fillet 2 tbsp. vegetable oil ¼ cup plain flour 1 tsp. grated lemon rind ½ tsp. dried thyme Salt and pepper 2 tbsp. lemon juice
· Divide the fish into 4 equal pieces.
· In a shallow bowl, combine flour, lemon rind, thyme, salt and pepper.
· Dip fish into lemon juice; dredge in flour mixture, turning to coat.
· In non-stick pan, heat oil over medium high heat; cook fish. Turning once, for 6 to 8 minutes or until flakes easily when tested with fork.
